    According to Merriam-Webster, artichokes are “a large, thistle-like Mediterranean composite herb (Cynara Scolymus) with coarse pinnately incised leaves; its immature edible flower head is cooked as a vegetable. Its first known use dates back to 1530.” (Merriam Webster) There are several types of artichokes. The most remarkable is the Jerusalem artichoke. It is entirely green and plump, shaped like a globe. Artichokes are one of my favorite foods. The heart's delight and scraping of the lightly seasoned pulp from the petals is simply stunning. There are many different things you can do with an artichoke; grill, bake, boil, stuff and season to taste. For years it was an appetizer served at many family functions and boy did I look forward to them. More recently, I discovered that Publix has the best artichokes. They are always fresh, plump and the petals are tight; all the qualities you look for in a good artichoke.
